The Waterfront NYC is seeking an Executive Sous Chef to join a team of exceptional individuals looking to bring world class hospitality to the Bronx, NY. As an upscale casual, New American restaurant with a focus on seafood and steaks, guests will enjoy refined service paired with progressive food and beverage options current with modern trends. Upon completion of construction, the restaurant will highlight the best of what New York City has to offer on the most prestigious public golf course in the tristate area.


RESPONSIBILITIES & DUTIES

  • Completes quality control line check for each meal period
  • Verifies all portion sizes, quality standards, department rules, policies and procedures are maintained by kitchen employees
  • Assists with training of kitchen personnel as well as food service staff
  • Set-up and ensures kitchen stations are ready to serve prior to service
  • Maintains high standards of quality and appearance of all food prepared and served
  • Develops organized prep sheets with each menu change
  • Ensures food tickets are complete and out in a timely manner
  • Ensures quantity of daily prepped foods to ensure the restaurant runs as smoothly and efficiently as possible
  • Complies with all sanitation standards (temperature logs, HACCP review, sanitation walk throughs, etc.)
  • Ensures all food orders are completed in an efficient manner
  • Orders and receives food products from vendors, checks in by item on invoice, and inputs in receiving log
  • Understands and complies with all company policies and procedures regarding safety, security, emergencies and energy


MINIMUM QUALIFICATIONS & REQUIREMENTS

  • Minimum 2 years of experience in full service restaurants and catering
  • Menu planning and recipe development
  • Hands-on leader in the kitchen and directly involved in preparing dishes
  • Able to inspire, motivate, and develop employees
  • Able to develop and place orders for events and restaurant service to vendors
  • Ensure cleanliness, proper sanitation and safety
  • Assist with training newly hired kitchen staff
  • Holds a certification in food handling
